Vanilla Mascarpone & Greek Yogurt with Berry Crumble


You don’t have to be a pastry master to make a simple yet elegant dessert that will always please. This vanilla mascarpone and greek yogurt with berry crumble will leave you feeling satisfied and oh-so sophisticated.

I love easy desserts because they don’t take up too much of my time and attention. This recipe in particular is one of my favorites because it requires zero baking, hardly any measuring, and no big clean up. I recommend making this next time you have guests over for a dinner party. Spend more time socializing and boozing with your company than stressing over dessert! 😉

For this recipe you will need:

1 cup mascarpone

1 cup plain Greek yogurt

1 vanilla bean, seeds removed

1 Tbsp honey

1/2 cup strawberries, hulled, cut in half

1/4 cup blueberries

2 Tbsp sugar

1 lemon, juiced and zested

2 shortbread cookies, crushed

Begin by combining the strawberries, blueberries, sugar, lemon juice and zest in a medium bowl. *This is known as the maceration process.* Wrap in plastic and set aside in the fridge for about one hour, until the berries have released some of their juices.

Mix together the mascarpone, Greek yogurt, vanilla bean seeds, and honey. Place aside. Place two shortbread cookies in Ziploc bag and seal tightly. Using your fist, beat the cookies until they are reduced to crumb size.

Plating:  Dollop a large spoonful of the mascarpone and Greek yogurt mix onto the center of a plate. Using the back of the spoon, make a well in the center of the yogurt mix. Plate the mixed berries in the well and drizzle with their juices. Sprinkle the shortbread cookie crumbs over the berries and garnish with two, whole shortbread cookies.
