Smoked Tuna with Orzo Salad and Balsamic Reduction


I get inspiration for new recipes almost everywhere I go. Whether it be work, school, or the grocery store, I am constantly thinking of new recipes to create. This recipe actually came from a tasting at the grocery store. There was a deal on smoked canned tuna so I thought hell, I will give it a try. Let me tell you, this isn’t your regular canned tuna. This stuff is so tasty and full of flavor so I had to buy a can and come with something special.

The Mediterranean diet is one of my favorites. It is all about fresh ingredients and hearty grains. This recipe makes for the perfect lunch or summer dinner. If you live in the South like me, you know how hot it gets during the summer months. Not only are we sweating the minute we walk outside, but our appetite is also affected by the heat. I know that I’m not as hungry when it is blistering hot outside. Who wants to eat soup or something heavy when we are trying to feel as light as possible? This recipe will satisfy your appetite while keeping you feeling light, thin, and sexy. The crisp cucumbers, sweet cherry tomatoes, tangy feta, and smokey tuna pair perfectly together. The balsamic reduction gives the pasta a sweet and tangy flavor like no other.

For this recipe you will need:

1 cup cherry tomatoes, halved

1 cup cucumbers, half moon slices

2 Tbsp capers

1 pack smoked salmon

1 small package orzo, cooked

1/2 cup feta, crumbled

1 can white beans, drained and rinsed

1 cup balsamic vinegar

Salt and Pepper

If you aren’t familiar, orzo is a type of pasta shaped like rice. This recipe is super simple and quick, so you can whip this up in no time at all! First, cook the orzo according to package instructions. Then, reduce the balsamic vinegar in a small sauté pan over medium-high heat. As the vinegar reduces, it will begin to appear thicker and more syrupy. Once the vinegar has reduced by half, about 5-8 minutes, turn off the heat. Assemble the tomatoes, cucumbers, capers, smoked salmon, and beans in a large bowl. Then, add the pasta and crumbled feta. Toss to combine and drizzle with the balsamic reduction. Season with salt and pepper to taste.
