Why is finding a place to go out to eat sometimes the hardest thing to do? I feel like every time my fiance and I are wanting to go out we just go back and forth with “you pick, no you pick, no you…” Cooking and eating at home is almost always less stressful than going out and fighting a busy dinner crowd. I’ll stay home for this salmon poké recipe any time.
Usually, my fiance is always craving Asian cuisine and I’m always craving Tex-Mex. Don’t get me wrong, I love Asian food but he LOVES Asian food. One of our favorite restaurants here in Austin is Komé. Their menu is amazing… gyoza (dumplings), miso soup, wasabi fries, hand-rolled fresh sushi… “I could go forever baby.” (Name that movie)
Fortunately for Komé, their restaurant is popular amongst all Austinites so we really have to plan accordingly when we want to go indulge there. Sometimes you can’t beat the dinner crowd at your favorite popular restaurants but you can try to create your favorite dishes at home. In this case, my fiance prepared a delicious salmon poké dinner for us at home. Wine was included, of course.
For this recipe you will need this:
1 cup Sushi rice
3 Tbsp Rice wine vinegar
6oz filet wild, fresh Atlantic salmon
1 Tbsp soy sauce
Cucumber, thinly sliced
Radish, thinly sliced
White sesame seeds
Cook the sushi rice according to package directions. Add the rice wine vinegar and a pinch of salt.
Cut the salmon into 1/2″ cubes. Mix with soy sauce with the salmon and set in the fridge until you are ready to eat.
Layer the salmon on top of the rice followed by the cucumber, radish and avocado. Garnish with white sesame seeds.
