Pan Fried Scallops Over Rainbow Quinoa {Video}

The Spring season is here and I’m cooking up some lighter, healthier options in the kitchen that I think everyone will love.  Give this delicious recipe a try!

I love Spring because temperatures are slowly but surely rising and before we know it, it will be blistering hot down here in the South which means pool days, outdoor barbecues, and reasons to have more social gatherings are just a few things to look forward to. If you’re looking for a delicious meal to fill you up but won’t weigh you down and make you want to torch all of your bathing suits, I think this is the perfect recipe for you.

This is one of my favorite recipes because it is healthy but so flavorful and satisfying. Even though I want to look and feel good for the hot, summer months, I don’t want to eat boring foods. I hope you enjoy this recipe as much as I do!!
