Why are the mornings always so crazy hectic?! I literally feel like I’m always scrambling to get out of the door and on my way to work. This is exactly why a quick grab & go breakfast is essential because Lord knows no one has time to slave over a hot stove on a week day morning.
I love breakfast but it’s very rare that I have the time to prepare breakfast during the week. For some reason, I give myself 20 tasks to take care of between 6:30am-8:45am and one of those isn’t making myself breakfast. On the contrary, I can make myself 3 cups of coffee no problem!
Breakfast really keeps my metabolism going and since I typically work out in the mornings, I’m usually starving by 10am. I find that the easiest thing is to prepare pre-made recipes to grab on my way to the office. Whether it is my savory egg cups, protein-packed breakfast cookies or this overnight oat recipe, they’re all easy to eat in the car or at my desk.
For this recipe you will need:
2 cups rolled oats
2 1/2 cups almond milk
1 Tbsp vanilla almond butter
1 1/2 Tbsp chia seeds
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
Simply combine the rolled oats, almond milk, almond butter, chia seeds, vanilla extract and ground cinnamon in a bowl. Give everything a nice stir before pouring into a mason jar or any other glass lid with a tight jar. Keep in the fridge overnight and simply garnish with fresh blueberries and almonds before devouring.
*This recipe is dairy-free but if you want to make it a little creamier, simply add vanilla or plain Greek yogurt to the mix.*
