Happy Friday! Today is such a special day for me because it’s my Breesy girl’s birthday. If you don’t know Brees, she is my first-born, beautiful, sassy, calico kitty. Today, she is turning 6 years old! Is this what it feels like for a parent when you realize your child is growing up too fast?
I wish our pets understood when their birthday is… who knows, maybe they do know?! In honor of my Breesy’s birthday, I’m giving her (and her sister, Roux) extra love, snuggles, treats and outdoor play-time. To be honest, I’m not sure if extra love even exists because those two are spoiled all day, every day!
What does this mango lassi recipe have to do with Breesy’s birthday? Absolutely nothing. But I couldn’t begin this post without acknowledging my muffin’s big day!
What is mango lassi? Better yet, what is a lassi? A lassi is a sweet and/or savory Indian drink made from yogurt or buttermilk base. Mango lassis derive from Indian cuisine and they make for a wonderful, refreshing treat- any time of the day! I like to drink mine in the mornings because it makes for a wonderful start to the day.
Mango lassi has multiple health benefits as it is packed with protein, fiber and vitamins. What I really love about mango lassi is that is has the properties to help with bloating. Lately, I’ve been feeling extremely bloated and it’s not a fun feeling. Since manog lassi is rich in probiotics, it prevents bad bacteria from hanging around in your gut while also eliminating high levels of cholesterol. Sign me up!
For this recipe you will need:
2 ripe mangos, peeled & cut into chunks
1 cup vanilla coconut yogurt
1/4 cup plain almond milk
2 tsp agave
1/4 tsp ground cardamom
handful of ice
Blend all ingredients together and voila! How easy is that?
I garnished my mango lassi with chopped pistachios and coconut flakes.
