Mediterranean Turkey Meatballs with Lemony Tzatziki Sauce

What day is it? Is anyone else not paying attention to the calendar? Or even the time? Sometimes I want to keep track of everything so things feel “normal” but other times, I just tell myself to enjoy this strange time where my responsibilities and tasks are very limited.

One thing is for sure: it will be very difficult when the time to go back to work comes. It’s not that I’ve been sleeping past 9 each morning, wearing pajamas all day long and holed up in my home like a hermit. Quite the opposite, actually. I wake up by 8am each morning, get a good workout in, clean the house, cook dinner, catch up with friends via Zoom or FaceTime… what scares me is that I’ve completely developed a new routine for myself… one that doesn’t require a 9-5 work day. Don’t get me wrong, I really miss working and feeling accomplished and “needed” but I’ve also been enjoying this time where I can do all of the things I normally would not be able to do. I keep telling myself to soak up all of this “me time” before it’s back to normal life.

Cooking is the one hobby and passion that keeps me feeling productive every day. Sometimes I can’t wait just to go to the grocery store to see what I can create for dinner. This recipe is such a delicious way to incorporate healthy foods into your diet. If you love Mediterranean flavors, you will absolutely love these turkey meatballs. Highly recommend!

Mediterranean Turkey Meatballs with Tzatziki Sauce

A delicious and simple recipe to eat & feel healthy!

Equipment

  • Large Baking Sheet
  • Microplane or Cheese Grater

Ingredients
  

  • 1 lb ground turkey
  • 1 shallot minced
  • 3 cloves black garlic (or regular garlic) minced
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 1 bunch parsley roughly chopped
  • 1 bunch oregano roughly chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp all spice
  • 1/4 tsp ground cinnamon
  • 1 pinch red pepper flakes
  • 1 tsp kosher salt
  • 1 pinch freshly ground black pepper
  • rice, quinoa or tabbouleh optional
  • hummus optional
  • crumbled feta cheese optional
  • chopped mint and/or parsley optional
  • tzatziki sauce (see recipe below)

Instructions
 

  • Begin by preheating the oven to 400 degrees F.
  • Spray a baking sheet with non-stick spray.
  • In a large bowl, combine the ground turkey, shallot, garlic, breadcrumbs, egg, parsley, oregano and spices. Gently mix all ingredients together. *No need to overmix!*
  • Using clean hands or a 1-ounce cookie scoop, form the meatballs into 1" – 1 1/2" balls (I got 12 meatballs out of 1lb of meat).
  • Space the meatballs on the baking sheet. Bake in the oven pre-heated oven for 20 minutes or until a thermometer reaches 165 degrees F.
  • Allow the meatballs to cool slightly before devouring!

Notes

You may also use ground pork, ground chicken or ground beef for these meatballs. 

Tzatziki Sauce

So good you will want to eat it with everything…

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1/4 English cucumber peeled & grated
  • 1 clove garlic grated
  • 1 lemon juiced
  • 1 tsp ground cumin
  • 1 tsp freshly chopped curly parsley
  • salt & pepepr to taste

Instructions
 

  • Combine all ingredients in a bowl. Refrigerate.
