Everything You Need Breakfast Bowl


A healthy, satisfying breakfast can make the biggest impact on the beginning of the day. I definitely enjoy giving myself a little extra time in the morning to eat something that will fuel my mind and body for whatever the day has to bring. This breakfast bowl is filled with protein, fiber, omega 3s, and vitamins your body will absolutely love. Get ready to feel strong and energized!

I love the morning time because I enjoy allowing my mind and body to wake up without feeling rushed and in a frenzy. My friends used to always ask me why I wake up so much earlier than I have to in the morning and it is because I truly enjoy the quietness and being able to drink my coffee in peace while preparing my mind for another day. Plus, being able to fix myself a delicious, healthy breakfast isn’t a bad reason to start the day a little earlier either. What I love so much about this breakfast recipe is the fact that it contains all of the nutrients I need to have a kick ass start to my day.

For this recipe you will need:

1 egg

1 cup mushrooms (whichever your prefer), sliced

1/2 cup quinoa

1/2 avocado, sliced

2 cups kale, de-stemmed

Zest of 1/2 lemon

Parmesan cheese

Dash hot sauce

Pinch red pepper flakes

Salt and Pepper


First, cook the quinoa according to package instructions. Then, in two separate sauté pans, heat 1 Tbsp olive oil over medium heat. Sauté the mushrooms in one pan and the kale in the other. Lightly sprinkle both with salt and freshly ground black pepper. Cook the mushrooms until tender, about 5 minutes and cook the kale until just wilted, about 2-3 minutes. Turn the heat off and set aside.

In a nonstick egg pan, heat 1 Tbsp butter over medium low heat. Cook the egg low and slow until the whites have completely cooked and don’t appear clear and runny. *I have my egg sunny side up but you may cook yours however you like.*

Add the quinoa, sautéed mushrooms, sautéed kale, sliced avocado, and 1/2 avocado to a bowl or plate. Zest 1/2 of a lemon onto the sautéed kale and sprinkle the kale and mushrooms with parmesan cheese. A couple dashes of hot sauce and a pinch of red pepper flakes gives this dish a little kick you will appreciate in the morning.

This breakfast bowl will make you feel like a million bucks- I’m not kidding! Bon Appetit!
