Delicious Dairy-Free Hot Cocoa

It’s 27 degrees here in Austin, TX. The dangerous, icy roads have prohibited many of us from going to work or basically anywhere in the city. SO, in a situation like this, the only thing I can do to keep myself warm and cozy is to make a delicious batch of dairy-free hot cocoa… and snuggle with my kitties.

Don’t get me wrong, I love the full-fat version of hot chocolate but in an effort to stay a little bit healthy while indulging, I decided to go the dairy-free route. Good news for any vegans – with no whipped cream or marshmallows, this recipe is also vegan-friendly. Win win!

For this recipe you will need:

3 cups almond milk

2 Tbsp cocoa powder

1/4 tsp kosher salt

1/4 tsp pure vanilla extract

1 Tbsp pure maple syrup

16oz semi-sweet chocolate, roughly chopped

Combine first 5 ingredients in a medium pot. Over medium heat, heat the cocoa until it reaches a low simmer. Then, add the semi-sweet chocolate and stir until it is evenly melted in the cocoa. Pour into a heat-proof glass and garnish with whipped cream, marshmallows, and chocolate shavings if desired.

It’s not every day I get to hunker down with my little family so I am taking full advantage of this! Stay warm!
