Experimentation is my favorite part about cooking and being in the kitchen. You don’t have to be a trained chef to get in your kitchen and make amazing dishes with the ingredients on hand. I do encourage you to play around in your kitchen more, if you do not already. You may find a true passion for cooking and food. Even though I am in culinary school, I have always been very interested in exploring different foods and seeing what food pairs well with what. While I was in college, I loved to cook every week night for my roommate and my boyfriend. It’s a lot more fun when you have mouths to feed and you hear “That was so good! Thank you!”
I am obsessed with this breakfast. I have literally been eating it every morning for the past couple of months and I’m still loving it. I think I enjoy it so much because it gives me the fuel and energy I need to power through the first part of my day. I have a strong feeling you will love it too!
For this recipe you will need:
1 Tbsp chia seeds
1 cup vanilla kefir (or whichever flavor you like)
Optional toppings:
A handful of blueberries
French almond granola
Dried cranberries
Slivered almonds
Pumpkin seeds
Walnuts
Sprinkle of cacao nibs
Mix the chia seeds and kefir tougher and allow to sit for a couple of minutes. Once the chia seeds are combined with liquid, they will expand in size and become somewhat gelatinous. Top with your favorite toppings. I hope you love it as much as I do. It’s actually quite filling so you will definitely feel satisfied and won’t be digging around the refrigerator or pantry for anything else. Enjoy!
