Is it just me or are the days going by so quickly? I feel like it was just the month of May and now we are about to enter July! I can’t keep up anymore and I’m embarrassed to even say that because now I seem to have much more time than I used to. Don’t get me wrong, I am loving being able to tackle all of the home projects I’ve been wanting to complete and I also get to do “housewife” things like taking care of laundry, cleaning the house, cooking dinner every night, etc. Even though 2020 isn’t what I originally planned for it to be, I’m trying to make the most out of it and be as productive as I can be. With that being said… I’m working on a little home business project which I’ll be announcing very very soon. I’m so excited!

I’ve been cooking up a storm during this entire quarantine. Everything from baked goods to elaborate dinners… I’ve really wanted to expand my knowledge of food videography and photography during the cooking process. Let me just say, capturing the best food photograph is no easy task! While I’m still trying to master food photography and videography, my recipes are perfect just the way they are! Hope you enjoy.

Bacon, Caramelized Onion & Feta Frittata

Equipment

  • Cast Iron Skillet

Ingredients
  

  • 2 Tbsp Avocado Oil
  • 4 slices Bacon cut into 1/2" pieces
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Asparagus cut into 1" pieces
  • 1/2 cup Caramelized Onion
  • 1/4 cup Crumbled Feta
  • 6 Large Eggs
  • 1/4 cup Whole Milk
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Ground Black Pepper
  • 1/4 tsp Smoked Paprika
  • 1 bunch Fresh Chives chopped

Instructions
 

  • Heat 1 Tbsp avocado oil in a medium cast iron skillet over medium heat.
  • Cook the bacon until fat has rendered, about 6-8 minutes.
  • Add the asparagus & cherry tomatoes to the skillet.
  • Crack the eggs into a bowl and add the milk, salt, pepper and smoked paprika. Whisk well.
  • Pour the egg mixture into the skillet with the bacon, asparagus and tomatoes.
  • Sprinkle the caramelized onions throughout the frittata as it cooks.
  • Next, sprinkle the crumbled feta over the frittata.
  • Once the edges of the frittata have begun to set, transfer the skillet to the broiler and broil for 8-10 minutes until the entire frittata is set and the top is golden. *Keep an eye on the frittata as the broiler is very hot!*
  • Remove the skillet from the oven and sprinkle with freshly chopped chives.
  • Enjoy!

Notes

For a vegetarian version, simply omit the bacon.
