This is hands down one of my favorite pasta recipes! I’m not going to say it’s that healthy, but it’s definitely packed with so much flavor and anyone can make it! The ingredients are simple and perfect together. My boyfriend drove 6 hours in town to visit me, and this is one of his favorite dishes as well. I had to cook it for him!
I originally discovered this recipe years ago while watching Giada De Laurentiis on the Food Network. However, since it is her homemade creation and not mine, I did do a few things differently so I can say I put my own unique spin on it. If you find a recipe you love, just play around with it and experiment in the kitchen. Before you know it, you will have created something different that you can say is actually yours. You have got to try this recipe! I can’t express it enough. Your family, friends, significant other, whoever will be so impressed.
For this recipe you will need:
1 box penne noodles
1 pack hot or mild Italian sausage
2 small cans marinated artichokes
1/2 cup chopped sun-dried tomatoes
3 cloves garlic, minced
1 cup dry white wine
1 cup chicken stock
Fresh Italian parsley
Fresh basil leaves, chopped
Boil noodles until al dente. Wit the Italian sausages, I like to remove them from the casing and roll into mini balls. In a large saucepan, brown the Italian sausage over medium-high heat until cooked through. Remove to a paper towel lined plate and set aside. Turn the heat down to medium-low and sauté the artichokes and garlic for 2-3 minutes, stirring frequently so the garlic does not burn. Then, add the wine, chicken stock, and sun-dried tomatoes. Bring the mixture to a slight boil so the sauce has an opportunity to reduce a bit.
Add the sausage back to the pan and let everything simmer together for about 15 minutes. Add the pasta, fresh Italian parsley, basil, and parmesan and toss together. Another thing I love about this recipe is that you don’t have to add any seasoning! There is already seasoning in the sausages and marinated artichokes. I hope you love it!
