Sometimes some of my best creations are the quick ones that I prepare on a complete whim. Many times, I am so hungry that I don’t even have time to go to the grocery store so I just scan through my fridge and pantry and think of something fast and a tad “gourmet” to make. Today’s smoked salmon with garlic and herb mascarpone was a complete success.

Salmon is pretty much my favorite fish to eat and salmon that is smoked is even better. This recipe is the bomb dot com because the smoked salmon pairs so perfectly with the garlic and herb mascarpone. This is the perfect dish to whip up for breakfast, lunch, or brunch. Just pour a couple mimosas and you will be on cloud 9.

For this recipe you will need:

Wheat English muffins or toast
Smoked salmon
1/2 cup mascarpone
1 clove garlic, pasted
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Juice of 1/2 lemon
Salt and pepper to taste

Combine the mascarpone, pasted garlic, chopped rosemary and thyme, and lemon juice in a bowl. Season with salt and pepper to taste. Simply spread a thin layer onto toasted English muffin or toast. Layer a few smoked salmon slices onto the toast.

I sliced some avocado and tomatoes and drizzled a little French vinaigrette on them for some extra color and nutrients on my plate. It’s that easy and I promise you will love the flavor this easy recipe packs. Bon Appetit!
