I have been trying to eat clean and organic these days, and fortunately, it’s quite easy to do that living while living in Austin.  The farmer’s markets and fresh produce in the grocery stores makes me want to go on a veggie shopping spree!  Have I mentioned that grocery shopping is one of my favorite past times? It’s true.  

This simple creation I am sharing with you is packed with flavor and the nutrients you need to feel good.  Your body will thank you for feeding it so well, and you will definitely be satisfied. Enjoy!

You will need:

1 lb. chicken tenderloins
1 cup cherry tomatoes, halved
1/2 yellow bell pepper, diced
1 jar marinated artichokes
2 cloves garlic, minced
Fresh basil
1/2 cup dry white wine
Salt & pepper to taste

First, season the chicken on both sides with salt and pepper. Sauté in a medium slope-sided sauté pan over medium-high heat for 10-12 minutes.  Then, add the cherry tomatoes, bell pepper, marinated artichokes, and minced garlic. Cook together so the flavors can infuse and marry.  Add the 1/2 cup white wine and simmer for an additional 5 minutes.  Once the chicken is cooked through and the vegetables are tender, toss with the fresh basil and season to taste.
