The warm weather makes me want to eat colorful, fresh, summer-y foods. Salmon is my all-time favorite fish because it is so delicious and good for you. I could eat salmon with anything, but here, it is topped with a fresh mango and jalapeño salsa. This recipe will make a perfect, summer weeknight meal!

When salmon is cooked properly, it is moist, buttery, and absolutely tasty. Overcooked salmon is so upsetting and it happens quite often. This recipe is great if you are trying to eat more healthy and get bathing suit-ready for the summer months ahead. Salmon is loaded with good for you Omega-3’s which are known for promoting proper brain function, efficient body metabolism, and keeping your skin looking lovely. The actual salmon fish itself is a bad ass fish that spends a big part of it’s life swimming upstream to where they were born to reproduce and then die. Pretty cool fish.

For this recipe you will need:

1 salmon filet
1 Tbsp olive oil
1/2 lemon, juiced
1 lime, juiced
3 roma tomatoes, small dice
1 mango, small dice
1/2 green bell pepper, small dice
1 jalapeño pepper, small dice
1/2 red onion, small dice
1/2 avocado
1 Tbsp cilantro, chopped
1 tsp ground cumin
Salt and Pepper

Preheat the oven to 400 degrees F. Lay a piece of foil onto a cookie sheet. Place the salmon filet in the center of the foil and rub with 1 Tbsp olive oil. Add the lemon juice and sprinkle with salt and pepper. Wrap the salmon filet in the foil so it stays moist. Bake in the oven for 20-15 minutes, depending on the size and thickness of the salmon filet. In a medium bowl, toss the tomatoes, mango, green bell pepper, jalapeño pepper, red onion, cilantro, lime juice, and ground cumin together. Season with salt and pepper to taste. Add the avocado and gently combine. (It’s best not to add the avocado when tossing all of the vegetables together because it may become too mashed.)
