Smoothies have started to become my dinner alternative because lately I’ve been eating rather large meals for lunch. Being in culinary school, we pretty much eat everything we cook, so by the time dinner rolls around I’m not in the mood to cook or eat anything heavy. Also, when I attend the evening workout classes I just want something quick and healthy that I can easily digest before bed. This smoothie is no joke- it’s loaded with lots of protein!

I love experimenting with different smoothie recipes because the options are endless. You can pretty much throw anything and everything into your blender and it’ll taste good. Who needs fattening sweeteners like sugar and peanut butter when you can use healthier alternatives like medjool dates, bananas, and almond butter? This smoothie will become one of your weeknight staples. Keep in mind that it is loaded with protein, so I recommend consuming it after an intense workout. You don’t want to consume too much protein when you aren’t burning calories.

Another reason this recipe is so awesome is because of the goji berries. I didn’t really know what goji berries were until recently and they are super duper good for you. These pink, little scrunched up fruits are powerful and even though they are a bit pricey, a little goes a long way. Goji berries have been around for a long time and are typically found in Asian and European cultures, but sold in bulk here in the U.S. Hot celebs like Miranda Kerr have raved about them and I think we’re all aware of how amazing she looks. They are an excellent source of antioxidants and contain anti-inflammatory, anti-bacterial, and anti-fungal properties. They’re the bomb dot com.

For this recipe you will need:

1 packet protein powder (in this case I used vanilla flavored Skinny Gut)
10 oz. regular almond milk
1/2 cup water
1 small banana
1 Tbsp Goji berries
4 medjool dates, pitted
1/8 tsp ground cinnamon
1/8 tsp pink Himalayan sea salt
1 tsp almond butter
Handful ice

Simply place all ingredients into a blender and blend until smooth and creamy. Add more water if you desire a thinner consistency. Drink up and enjoy all of the health benefits!
