What is a better reminder of our childhood than a classic grilled cheese sandwich? Let’s bring those warm, fuzzy memories back but kick it up a notch! My version of a grown-up grilled cheese is this delicious grilled pimento cheese sandwich. You will LOVE.
For those of you who don’t know, (and it’s ok because I didn’t know for a long time) pimento cheese is simply a cheese spread commonly made with cheddar cheese, mayonnaise, pimento peppers, salt and pepper. In my home state of Louisiana, it is often times prepared with additional ingredients such as: cream cheese, hot sauce, Worcestershire sauce, jalapeño peppers, and cayenne pepper. Pimento cheese is also known as the “Caviar of the South.” Pretty cool, huh?
You may make your own pimento cheese from scratch or buy it straight off of the grocery store’s shelf. These grilled cheese sandwiches will make ya wanna slap ya momma because they are so good!
For this recipe you will need:
1 1/2 cups shredded sharp cheddar cheese
1/2 cup real mayonnaise
1 jar chopped pimentos, drained
Couple dashes hot sauce
Pinch of cayenne pepper
Salt and Pepper to taste
Hearty, thick sandwich bread
Pulse the cheese, mayo, pimentos, hot sauce, cayenne, salt and pepper in a food processor until just combined. Check for seasoning. Cover and chill for at least 3 hours in the refrigerator.
Like any grilled cheese sandwich, you may cook these on a griddle, in a sauté pan, or in a panini maker. Heat the pan to medium-low, spread a little bit of the unsalted butter on the outside pieces of the bread. Spread the pimento cheese on the inside slices of the bread, slap two pieces together, and throw it on the pan. Flip the sandwich once the bread begins to turn golden brown and the cheese has begun to melt. Brown the other side of the sandwich. It’s as simple as that!
