One of my favorite fruits is the blueberry. It is a powerful little fruit that is loaded with several health benefits such as having high antioxidants, iron, calcium, potassium, magnesium, vitamins A and E, and so much more. They are one of the most popular, summertime fruits and this recipe proves how amazing they are. Good things really do come in small packages.
What is so fantastic about this sweet recipe is how easy it is! I can’t stress how simple it is and believe me, I normally don’t enjoy baking or doing anything with sweets because I have a hard time following recipes and measuring everything exactly. The great thing about cooking is that you can eyeball most ingredients and just throw in everything except the kitchen sink. However, this blueberry mousse recipe requires no baking and barely any measuring. It will literally take you 20-30 minutes and it is absolutely delicious. I can’t take all of the credit though- I found this recipe flipping through my Food & Wine Magazine. They won me over with this one. Of course, I added one little ingredient that perks up the recipe: lemon zest.
For this recipe you will need:
1 cup blueberries, plus more for garnish
Zest of 1 large lemon
1/2 cup sugar
1 tsp kosher salt
1 cup sour cream
8 oz. cream cheese
1 cup heavy cream, chilled
Blueberries, pumpkin seeds, slivered almonds, for garnish
In a small sauce pot over medium heat, cook the blueberries, lemon zest, sugar, and salt until it forms a jammy consistency, about 10 minutes. In the meantime, whip the heavy cream with a whisk or electric mixer until it forms soft peaks, about 5 minutes. Once the blueberries have cooked and cooled, pour them into a food processor or blender. Add the sour cream and cream cheese to the processor/blender, as well. Mix contents until everything is well-combined and smooth. Gently fold the blueberry mix into the whipped cream. Cover and chill in the refrigerator for at least 1 hour. Garnish and serve chilled.
This dessert pretty much tastes like a crustless blueberry cheesecake- freaking awesome! Hope you just love it.
