Let’s get real for a minute- the first day of Spring is March 20. This means that the temperatures will be warming up and bathing suit season is getting closer and closer. I live in the South, so it might as well already be Springtime because it is starting to get quite warm outside, but I am certainly not ready to put on a bikini just yet. I’ve been trying to get serious with my diet and fitness game so I won’t be panicking when it’s time to put the first bikini of the season on. My banana nut granola bars help keep me on track so I’m not mindlessly munching throughout the day.

Healthy snacks are extremely important because who doesn’t love to snack? No matter where you are, if you aren’t ready to snack on something good for you, you will most likely end up eating something that isn’t so good for you. I always try to be prepared when it comes to packing a healthy snack with me to work. If not, I will eat anything in sight like a bag of chips or candy. Basically, if it isn’t nailed down, I will eat it. Hunger is a primal instinct- it ain’t nothing to play with.

For this recipe you will need:

3 large ripe bananas
1 tsp vanilla extract
2 cups rolled oats
1/4 cup medjool dates, pitted
1/4 cup pecans, chopped
1/2 tsp salt

Preheat the oven to 350 degrees F. In a bowl, mash the bananas with a fork until there are no more large chunks. The banana should appear quite liquid-y. Add the vanilla extract and mix. Add the rolled oats and mix.

Add the medjool dates, chopped pecans, and salt and mix well. Spray a 9 x 9″ baking dish with baking spray. Using your hands, pat the granola mix into the baking dish. Bake in the oven for about 20-25 minutes or until the edges begin to brown. Β Allow to cool before cutting them into squares. Enjoy!
