I have been cursed ever since I can remember. Cursed with the infamous, selfish, sweet tooth! I have always craved sweet foods ever since I was a child, and it doesn’t matter how hard I try, it never seizes. So, in a proactive approach to please my sweet tooth and my abdomen, I have been experimenting with healthier options. My almond butter, medjool dates, and vanilla cookies are the perfect creation to solve this everlasting problem.
Lately, I have been researching and reading up on healthier dessert recipes involving almond flour, coconut flour, maple syrup, honey, dried fruits, etc. It’s all about finding a healthier substitution and I can promise you, you won’t even miss the bad stuff like sugar and white flour. The thing about chocolates, cupcakes, and other delicious yet extremely unhealthy desserts is that they make you feel good only while you are in the midst of devouring them. Then, the guilt and self-annoyance starts to sink in once you have realized that you ate triple the amount you had planned on. Yep, this has happened to me on a number of occasions.
With healthier options such as my almond butter, medjool dates, and vanilla cookies, you can eat two or three cookies and not feel horrible at all! They aren’t only satisfying, but they are loaded with good-for-you nutrients which will fill you up and not leave you feeling empty and wanting more. Meaning, they are filling because they are nutritious. If you have never baked with medjool dates before, you will love it! They are so naturally sweet- it’s amazing.
For this recipe you will need:
1 cup almond flour
1 cup almond butter
1/4 cup organic maple syrup
1 organic egg
1 tsp vanilla extract
1/4 cup medjool dates, stem removed and chopped
1/4 cup raw organic cacao nibs (pieces)
Preheat oven to 350 degrees F. In a standing mixer or a bowl with an electric mixer, beat the almond flour and egg until well combined on low speed. Then, add the almond butter, maple syrup, and vanilla extract. Once the batter is slightly wet, sticky, and well incorporated, gently fold in the medjool dates and cacao pieces.
Roll the batter into small balls and place on a coconut oil-greased cookie sheet. Gently press on the cookies and slightly flatten them. Bake for 8-10 minutes. Remove the cookies and lightly sprinkle with the sea salt. Enjoy at any time of the day!
