If you’ve ever thought there is no such thing as a “healthy” cookie, think again. Today I had to babysit my favorite 2 and 4 year old girls, and their lovely mother informed me upon my arrival that she made a fresh batch of almond butter cookies. She advised me that they are addicting, but I just couldn’t resist. Granted, they were mini but I was doomed after the first bite. I got to thinking of how I could amp up the recipe even more!
Healthy doesn’t mean sacrificing the foods you love. If there’s one thing you should know about me, it’s that I have a major sweet tooth problem. Every night I have to have something sweet before bed and I believe I have found my new favorite sweet. The fact that it’s healthy and doesn’t contain any flour or oil makes it even better!
For this recipe you will need:
2 cups almond butter
2 tsp baking soda
2 organic eggs
2/3 cup raw honey
1 tsp fine sea salt
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
Preheat the oven to 350 degrees F. Mix all ingredients together in a bowl with an electric mixture until well combined. The dough should be a big, sticky ball. Roll into small balls and place onto a sheet pan lined with parchment paper. Bake the cookies for 10-12 minutes and cool on a drying rack. Cool in the refrigerator about 5 minutes prior to consuming. These will ensure that the cookies hold together well. Store the cookies in an air-tight container.
